Another important thing is to keep the potato strips soaked in cold water for at least 30-45 minutes.

Oil: Most of the recipes call for frying the potatoes twice. The first frying is done till the potatoes are done as in the same are cooked. The second time the potatoes are fried till crisp.

Seasoning: The homemade French fries have been seasoned with only salt. You can also use black pepper powder, chaat masala, etc. to spice up the French fries.

2.Place a peeled potato on a chopping board.

3.Slice off the bottom of the potato. This gives a steady base to the potato.

5.Cut into 1 cm thick strips.

12.Thereafter heat enough oil. The oil should be medium hot.

13.Add a few potato strips in medium hot oil.

14.Fry till these are just cooked. There should not be any change of color.

15.Transfer on a kitchen towel.

17.Sprinkle enough corn flour on it, such that the fries get coated with it.

18.Freeze these for an hour or so.

19.Heat enough oil. Add a few at a time. Fry on high flame. Do not thaw the fries.
