Sandwich masala is a mix of spices that adds zing to the sandwiches. It calls for the basic spices easily available in our pantry. It is mild and flavourful. However, if you want you can increase the heat by increasing the peppercorns or by adding some dry red chilies. Similarly, the tanginess can also be adjusted as per your taste.
1. Heat a pan. Add ¼ cup cumin seeds, 2 tbsp fennel seeds, 1 tsp cloves, 2 tsp black peppercorns, 1 tsp cloves and 1” piece of cinnamon. Roast on low flame till the spices turn aromatic. Take them out in a bowl. And let them cool completely.
2. Add the roasted spices to the grinder jar and make a fine powder. Add other powdered spices i.e. 2 tsp black salt and 2 tsp dry mango powder. Mix.
3. Store in an airtight glass container. Always use a dry spoon to take it. It shall stay good for 6 months.
