And it is a good idea to do so because biryani is an elaborate recipe and therefore having a few elements ready beforehand, is very relieving.
I have been making biryani for quite some time now. I would always use the store-bought biryani masala. It gave me good results but nothing extraordinary or good enough to be called the best biryani. However, when I prepared the biryani masala at home and used it to make biryani, it was absolutely delish. This biryani masala doesn’t add heat to the biryani. It adds spiciness and flavors. No red chilies have been used for making the biryani masala. It makes absolutely aromatic biryani masala.
Well, it is very simple. Use it to make biryani. You can use it to make veg biryani or non-veg biryani. I use approximately 1 tbsp of this masala while making biryani using 1 cup of rice. And when I use this biryani masala, I do not use any other whole spices. And then there are no cloves or cardamoms coming in the mouth and annoying my little ones.
The following whole spices have been used. The quantity mentioned gives a very aromatic biryani masala. However, you can increase or decrease the quantity of any particular spice as per your liking.
The biryani masala stays good in a refrigerator for up to a month. In the freezer, it stays good for up to 6 months.
You make it once and you will know why should you use homemade biryani masala? The most important thing is that it is absolutely customizable. You make biryani using this biryani masala and if you feel, you can adjust the spices as per your liking, when you make it the next time. Not to forget, it doesn’t include any artificial colors or preservatives.
