Moong Dal Khichdi Recipe with step by step pictures- Khichdi is basically a one-pot wholesome meal made with dal and rice and a few vegetables, sometimes. Moong dal khichdi is prepared using yellow moong dal and the churi of basmati rice. It is seasoned with some salt and for some added richness, little ghee is added. Khichdi is the most favorite comfort food across the country. Khichdi comes to the rescue when one if short of ingredients or ideas as to what to cook? Also when unwell, khichdi is the food that is prepared for the sick. It is healthy as well as easy to digest. Khichdi can be customized in a number of ways, by adding vegetables, spices, etc of your choice. You can also temper khichdi. This recipe is the recipe for basic moong dal ki khichdi. This is the way I make it at home. It can be served with some yogurt, ghee, and papad for a light yet satisfying meal.
Moong Dal: Yellow moong dal, without the skin, has been used to make the khichdi. Moong dal khichdi can also be prepared using green moong dal. It is important to wash the dal properly and soak it for 15-20 minutes. However, it should not be soaked for longer.
Rice: I have separate rice for my khichdi, pulao, biryani, etc. For khichdi I like to use the broken basmati rice, basmati ki churi as I know it. You can use regular basmati rice. You just need to soak it and later crush it for making khichdi. The ratio of rice and dal is critical for any khichdi recipe. I have used rice and dal in the same proportion.
Salt and turmeric: I have not used any other spice except salt to season the moong dal khichdi and little turmeric powder for the yellow hue.
Ghee: Khichdi is not complete without some ghee on the top.
Water: Well, the quantity of water depends on the consistency of the khichdi you like. Up to 4 times water works the best for khichdi. I like to add up to 3 cups of water at the time of cooking khichadi and thereafter add more to adjust the consistency at the time of serving the same.

2.In a cooker add ½ cup of soaked moong dal and ½ cup of soaked rice along with 3 cups of water. Also add salt to taste and ¼ tsp turmeric powder.
3.Before putting the lid, let the mixture come to a boil. Then put the lid. It prevents the content of the pressure cooker from splashing.
4.Cook it on high flame till the first whistle. Thereafter reduce the flame. Cook on low flame for 5-7 minutes.
5.Let the pressure release. Thereafter open the lid.
6.At the time of serving, check and adjust the seasoning and consistency. To adjust the consistency, add warm water.
7.Serve warm. Bon appetite!
