Rumali Roti Recipe with step by step pictures- Thin and soft flatbread made with all-purpose flour or a combination of all-purpose flour and whole wheat flour, cooked in a unique manner on the convex of a kadai, folded like a hanker chief and served, is rumali roti. The name rumali roti comes from the word rumal. Rumal means hanker chief, rumali roti is folded as a hanky and therefore so-called. It is a bit tricky to make this roti. If these are overcooked or cooked on a low flame, they lose their texture. However, if a few things are kept in mind, which have been explained here, rumali roti recipe is an easy recipe and this bread can easily be prepared at home. Rumali roti can be served with spicy gravies and dals etc.

Ingredients for Rumali Roti Recipe

Flours: Generally only all-purpose flour is used to make roomali roti. This recipe uses a combination of all-purpose flour and whole wheat flour. Although it alters the texture of the rumali roti it does two things. First and the obvious one is that it makes the roti healthy and second, the rolling of roti becomes easier. If the rumali roti is prepared using only all-purpose flour, it becomes very difficult to roll it. It keeps coming back. Although you can get the perfect texture with all-purpose flour only.

Milk: Milk makes the roti softer. Rumali roti recipe calls for lukewarm milk. However, you can knead the dough with water if you want to avoid milk.

Oil: Very little oil is added while making the dough and to smoothen the dough for rumali roti.

Salt: Roomali roti is seasoned with some salt to taste.

How to make Rumali Roti?

Perfect rumali roti is soft and very thin. Following points should be kept in mind to make perfect rumali roti:

  1. Make sure to make soft dough for rumali roti. The dough for rumali roti is softer than the dough for regular roti.
  2. The dough should be allowed to rest for at least 20 minutes.
  3. While rolling the dough, make sure to roll the sides thinner.
  4. Saltwater is prepared and used to sprinkle on the vessel used for making rumali roti. It makes the surface non-stick.
  5. Cook the roti on high flame. Do not cook it for too long. The roti is very thin and will be cooked well even if it appears a bit whitish or raw.
  6. Serve the rotis immediately. Once it gets cold it loses its texture.

1.This recipe makes 6-8 rumali roti depending on the size.

2.In a mixing bowl, add 1 cup of whole wheat flour (atta).

3.Next add all-purpose flour (maida).

4.Add salt to taste.

5.Followed by 2 tsp of oil.

6.Gradually add lukewarm milk

7.Mix everytthing.

8.Add milk gradually as much required.

9.Knead the dough for rumali roti.

10.Make soft and smooth dough.

11.Cover it with a damp cloth. Leave it to rest for 20-30 minutes.

12.Meanwhile, prepare salt water. For that, take 1 cup of water in a bowl.

13.Add 1 tsp of salt and mix. Keep aside for now.

14.After resting the dough, take a portion of it.

15.Smoothen it.

16.Roll it.

17.Roll it till it is translucent.

18.Place an inverted kadai on the gas stove. I have used the cover of my gas tandoor. Make sure not to use non stick kadai.

19.You can use a couple of bowls to balance the kadai or pan.

20.Once it is hot, sprinkle saltwater on it.

21.Roll the roti on the rolling pin.

22.Roll it back on the kadai.

23.Cook for a few seconds till it bubbles.

24.Flip. Lightly press it with a kitchen towel and cook it for a few more seconds. Do not overcook the roti.

25.Fold it like a hanky.

26.Serve hot.
