A mixture of crunchy vegetable and smooth mayonnaise sandwiched between fresh and soft bread slices make a nutritious and delightful sandwich, mayonnaise sandwich. It has the bites of onion and capsicum, the juiciness of sweet corn kernels, the brightness of carrots, and a cheesy hint. Mayonnaise sandwich recipe can be customized in a number of ways. Right from the bread to the vegetables, everything is editable, except the mayonnaise of course. That can’t be skipped!
I have used brown bread. However, the final pictures were taken when the sandwich was prepared using white bread. The sandwich can be prepared using multigrain bread too. It is very important to use fresh and soft bread as the sandwich has not been grilled or cooked. Although you can try doing that. Further to give a mix of bites I have used capsicum, onions, corn kernels, etc. You can use yellow, red bell peppers, cucumber, lettuce, tomatoes, etc. To enhance the flavor, I have added grated processed cheese and the stuffing has been mildly spiced with freshly ground black pepper. And of course, mayonnaise gives the necessary flavor to these sandwiches. I tried different combinations with mayonnaise such as green chutney, ketchup, mustard sauce. Ketchup made the sandwich too sweet, green chutney added a different hint to the sandwich, which did not work for me, yes mustard sauce complimented the flavor of mayonnaise very well. However, my favorite has got to be a simple mayonnaise sandwich without any add on spread. Go ahead and try out for yourself.

This sandwich can be served cold. So just chill it and serve it with a nice Vanilla milkshake for evening snacks.
1.This recipe makes 6 sandwiches.
2.In a mixing bowl add ½ cup boiled sweet corn kernels, ¼ cup chopped onion, ¼ cup grated carrot, 2 tbsp grated cheese, 2 tbsp chopped capsicum, ¼ cup mayonnaise, salt to taste, 1 tsp freshly ground black pepper. Mix well.
3.Butter the slices with little butter.
Tips:Buttering the slices prevent the sandwich from getting soggy.
4.Spread the stuffing.
5.Cover with another buttered slice.
