Bhatura is a deep fried Indian bread made using all purpose flour. It is served with chole to make a very popular Punjabi meal of Chola Bhatura. Generally, bhatura calls for some fermentation. However, this recipe will give you perfectly puffed bhatura, absolutely non-oily (as in they don’t absorb much oil in spite of being deep-fried) in just 10 minutes. Just team it up with your favourite chole recipe and be sorted.

In India Lehar soda is very easily available and I have used the same. We have to prepare a dough of all purpose flour using drinking soda. No fermentation, no rest time is required. Just knead, roll, fry, indulge and repeat.

1. Take 2 cups all-purpose flour (maida) in a large bowl.
2. Add salt to taste. And mix.
3. Add drinking soda gradually and make a soft dough.
4. Divide the dough into balls, flatten them.
5. Roll the balls into double the thickness of a chapati.
6. Heat oil in a pan and deep fry till it turns golden.
