Before knowing Masala Chai Pannacotta, let’s understand what is pannacotta? It is an absolutely luscious dessert prepared using milk, cream, and sugar or any other sweetener of your choice. The pannacotta can be flavored in a number of ways. This recipe is for the masala chai pannacotta. Making it very obvious that the pannacotta has been flavored with masala chai. Masala chai, if one of the most common beverages in India. And when this classic Italian dessert takes this flavor, it becomes a combination that deserves a try. Pannacotta is generally mildly sweet and is often served with some sweet sauces, brittles, fruits, etc. I have topped the masala chai pannacotta with sugary biscuits. That balances the sweetness as well as adds a slight crunch which goes so well to the otherwise smooth dessert. Pannacotta is an absolutely perfect party dessert because it can be prepared with very little active time, can be prepared ahead of time, and looks stunning. But certainly, this does not mean that you have to wait till you host a party to indulge in this, just make it and pamper yourself.
Milk: I have used whole cream milk for this recipe. It makes the pannacotta even lusher.
Cream: Heavy cream is also used in combination with milk. I have used milk and heavy cream in a 1:1 ratio. You can add in more cream i.e. 2 parts cream and 1 part milk.
Sugar: I have used the regular granulated sugar to make the pannacotta. You can use any sweetener of your choice. Also, you can adjust the sweetness as per your liking. This recipe makes mildly sweet pannacotta.
Tea leaves: I have used spiced tea leaves to make the masala chai pannacotta. If you do not have the masala chai patti, you can add in the chai masala along with the tea leaves. And if you do not have chai masala too, so can simply add in the spices as per your liking. Spices such as green cardamom, black cardamom, cloves, peppercorns, cinnamon, nutmeg, etc. For the given recipe, add in the spices as much you would add for 2 cups of tea.
Agar-Agar powder: I have used agar powder as the setting agent. You can use gelatine too. Whatever you plan to use, make sure to check the instructions on the given pack to understand the quantity that needs to be added.

Make Masala Chai Pannacotta for a weekend dessert.
PREP TIME 3 hours setting time
COOK TIME 15 minutes
TOTAL TIME 15 minutes + 3 hours passive time
1 cup milk
1 cup heavy cream
2 tsp masala tea leaves
or 2 tsp tea leaves + 1/2 tsp chai masala (if not using masala chai)
2 tbsp sugar
1/2 tsp agar agar powder + 2 tbsp water
1. This recipe serves 4.
2. In a pan, add in 1 cup of milk.
3. Let it come to a boil.
4. Add in 2 tsp of masala tea leaves.
5. Switch off the flame.
6. Cover the pan and let the tea steep for a couple of minutes.
7. After a couple of minutes. Add in 1 cup of cream.
8. Also add in 2 tbsp of sugar.
9. Let the cream come to a simmer.
10. Meanwhile mix 1/2 tsp agar agar powder in 2 tbsp of water.
11. Mix well and ensure that the agar agar powder dissolves properly.
12. Add the agar agar mix to the prepared milk and cream mix.
13. Let is come to a good boil.
14. Strain the tea.
15. Add in the glasses or cups or molds of your liking.
16. Leave it at the room temperature for 30-40 minutes.
17. Refrigerate for 3-4 hours.
18. Serve. Bon appetite.
