Chai, an Indian beverage, main ingredients being milk, water, sugar and tea leaves, when infused with saffron gets a very subtle yet classy flavor and is kesar chai. Kesar chai was first prepared for me by my husband. It was late and I was writing blogs, he saw I was exhausted and in no time I found of a cup of hot steaming tea in front of me. So refreshing it was! That very moment I decided to put kesar chai on the blog. And here it is!
It is pretty simple. The method of preparing tea and infusing it with saffron flavor is the key, and the same has been explained in the recipe part. No extra flavor needs to be added.
There are many simple ways to flavor tea. Cardamom tea and ginger tea are the common ones. Cutting chai is a typical tea from the streets of Mumbai and certainly deserves a try.
Kesar chai can be served at tea time with tutti frutti cookies or butter cookies.
1.This recipe makes 2 cups of saffron tea.
2.Let 1 and ½ cup water simmer.
3.Simultaneously dry roast 6-8 strands of saffron (kesar) for 30 seconds on a low flame.
4.Cool and crush to powder the same.
5.Add saffron powder to the simmering water. Let it simmer for a minute.
6.Add in 1 tsp tea leaves.
7.Also add 2 tsp sugar. Let it simmer for a couple of minutes. Switch off the flame.
8.Let the tea brew for 5-6 minutes, basically just cover it and leave it.
9.Next add in ½ cup of hot milk. And let it sit for a few seconds. Check the flavor and sweetness.
10.Strain it into tea cups.
11.Serve hot. Bon appétit!
