Kachumber Sandwich Recipe having the bite of onions, crunch of cucumber, freshness of coriander leaves and juiciness of tomatoes, is kachumber sandwich. It is a very simple and quick sandwich. And the best part is it can be adjusted as per your taste and availability of vegetables. Kachumber sandwich can be prepared for breakfast or can be teamed with a piping hot soup for a simple dinner.
Kachumber sandwich basically calls for kachumber salad. I have used basic vegetables to make the kachumber salad, you can use whatever add or omit as per your taste. To give a binding to all the vegetables a boiled and grated potato has been used. Chopped coriander leaves add a lot of freshness to Kachumber Sandwich. For the seasoning, just salt and black pepper have been added.
1. In a mixing bowl add all the veggies, 1 chopped onion, 1 chopped tomato and a handful of chopped coriander leaves.
2. Also, add in 1 chopped cucumber and 1 boiled potato. Of course, step 1 and 2 can be merged, I don’t remember why I did this in 2 steps.
3. Add salt to taste and 1 tsp black pepper powder.
4. Butter the slices well. Spread approximately ¼ cup of the filling on the buttered slice.
5. Pack with another buttered slice. And cook in a grill pan or electric griller.
6. Cook till golden brown from both the sides.
7. Bon appétit.

• 12 bread slices
