Coriander chutney is an Indian spread made using coriander, mint etc. It is tangy and spicy. It is indispensable for Indian chaat repertoire. Apart from that, it gives a good kick to the mini meals consisting of dal – rice, kulcha-Chola, Chola-chawal etc.
Coriander chutney calls for coriander leaves, mint leaves, raw mangoes, lemon, green chilies etc. This particular recipe is a summer special recipe for green chutney. I love adding all the things with the cooling effect such as mint and raw mangoes. Both are very beneficial during summers. I have mentioned the number of ingredients in the recipe but most of them can be adjusted not only as per your taste but also as per their taste, as in if raw mangoes are not tangy enough, you might have to add more than the mentioned quantity. Likewise, green chilies’ heat also varies. So adjust accordingly.
1. Add all the ingredients into a grinder jar : Add 2 cups chopped coriander, 1 cup chopped mint leaves, 2 tbsp grated raw mango, black salt to taste, ½ tsp cumin seeds, 1 chopped green chilli and ¼ black pepper powder.
2. Grind : Add water as required. And make a smooth paste.
Tips: Do not over grind the chutney that would cause the loss of colour and taste.
3. Taste and adjust : Taste the chutney. Check salt, tanginess and heat. Adjust according to your taste and if chutney can’t be adjusted, you adjust your taste ;). Okay, I was kidding!!
4. Bon appétit : Enjoy green chutney with snacks such as samosa, bread rolls etc or parathas such as besan paratha, aloo paneer paratha.
