Chhena Murki recipe is a
Recipe using paneer: I have used homemade paneer, as it gives the best results. Paneer should be soft but at the same time firm.
Sugar syrup: A sugar syrup flavored with cardamom and rosewater is used. Rose water compliments the dish very well. You may also use kewda water.
1. Take 200 gm cottage cheese (paneer) and cut into small pieces.
2. Add 300gm sugar in a pan.
3. Add 1/2 cup water.
4. Stir well and cook for 5-7 minutes.
5. To check if the sugar syrup is done, take a few drops of syrup on a plate. It will hold its shape.
6. Alternatively, take a drop of syrup between your fingers and check string consistency. It should form a single but long string.
7. Add crushed seeds of 4-5 cardamoms.
8. On low flame add paneer pieces into it.
9. On medium flame stir and mix. Use a silicon spatula to avoid breaking of paneer.
10. Add 1 tsp rose water. The sugar syrup would be frothy by now.
11. Once the syrup turns frothy, switch off the gas flame and keep stirring and mixing. As it cools the syrup with start solidifying.
12. Mix sugar syrup is well coated on the paneer pieces.
13. Take out chhena murki and the leftover sugar syrup (which will be powder form) can be used for making tea etc.
14. Bon Appetit - Serve chhena murki during fasts or festivals.
