What is Sooji Halwa?

sooji halwa is a kind of pudding made with semolina, water, sugar and clarified ghee. although very simple it is absolutely divine and pious. although made with just a handful of ingredients it tastes heavenly. sooji halwa is made as bhog to god and goddesses. I follow particularly this recipe to make sooji ka halwa for Ashtami prasad which includes halwa poori and chana. do try this recipe as it is

let’s talk about the Ingredients for Sooji Halwa

sooji halwa recipe is a

recipe using semolina: semolina i.e. sooji has been used. I have used thick or the regular semolina instead of the fine one. make sure to roast semolina properly.
other ingredients: ghee i.e. clarified butter has been used and I do not cut down its quantity because enough ghee is very important for the perfect texture of sooji halwa. as such nuts may be not added for Prasad, I have added some blanched and halved almonds n cashews which I had roasted slightly. you may also add some desiccated coconut or cardamom powder or totally skip the nuts.

How to make Sooji ka Halwa for Ashtami

1. Roast Nuts : Heat 1 tsp ghee. add nuts and cook on low flame till they turn golden.

2. Cook Semolina in Ghee : Heat ½ cup ghee. add ½ cup semolina. cook on low flame till it turns brown and crisp as the colour and texture of sand.

3. Add Water and Sugar and Nuts : Add 2 cups water. stir continuously and make sure there are no lumps. add 1 cup sugar. keep stirring and cook. add roasted nuts. cook till oil oozes and halwa leaves sides.

4. bon appétit : Serve sooji halwa with Kala chana and poori as prasad
