Chana Masala Powder is a mix of spice that introduces flavours to chana masala/chole recipes. This particular chana masala powder is a “one man army”…this spice is enough to spice up your chana masala. Chana masala is a weekly thing at my home. And this Chana Masala Powder is a monthly thing. Every month I prepare a stock of this chana masala powder and make my life easy. The chana masala powder has a longer shelf life but I feel flavors diminish with time and chana masala is a serious affair, I can’t take any chances ;).
There are different spices and different combinations used to make chana masala powder. This one has a nice balance of flavours. The ingredients required are pretty simple and minimalist.
1. Grind 4 bay leaves, 8 black cardamoms, 2-inch cinnamon stick and 2 tsp black peppercorns and 16-20 cloves.
2. Add 6 tsp red chilli powder, 4 tsp coriander powder, 2 tsp turmeric powder, 2 tsp dry mango powder, 4 tbsp pomegranate seeds.
3. Add 3-4 tbsp chana masala powder to prepare chana masala for 4 persons (approximately when you use 1 cup chickpeas). Do not add any other spices except salt. You can adjust the quantity as per your taste.
PREP TIME 10 minutes
COOK TIME 1-2 minutes
TOTAL TIME 11-12 minutes
Grind whole spices
Grind 8 bay leaves, 8 black cardamoms, 2 inch cinnamon stick and 2 tsp black pepper corns and 16-20 cloves.
Add other spices
Add 6 tsp red chilli powder, 4 tsp coriander powder, 2 tsp turmeric powder, 2 tsp dry mango powder, 4 tbsp pomegranate seeds.
P.S. I forgot to add red chilli powder so I added it later.
Tip: Adding powdered spices to the grinded whole spices helps in mixing up all the spices. Also if you are making a small batch(for instance in the given pictures I am making just 1/4th of the recipe), by powdered spices will help in grinding the whole spices to a fine powder.
Dry roast chana masala powder
Heat a pan and dry roast chana masala powder on a low flame for 1-2 minutes or till aromatic. Let it cool and store in a glass container.
Bon appétit
Add 3-4 tbsp chana masala powder to prepare 1 cup chana masala. Do not add any other spices except salt. You can adjust the quantity as per your taste.
