Yogurt flavored with tomato chunks, coriander leaves, and mint leaves, is tomato raita. It is very easy and simple raita and complements the pulao recipes very well. What I like the most about tomato raita is the contrast of color it offers. White yogurt with red tomato chunks looks so appealing. Raita recipes are my family’s favorite. They love eating it and I love making it. Any boring meals or simple pulao or rice can be pepped up with proper raita. And I love it because they are so simple to make.
Raita recipes are so simple. Yogurt plus the main ingredient plus seasoning, that’s it! I like to add sugar to my raita when the ingredients are on the sweeter side. However, for sharp ingredients, I omit the sugar. Following is all you need to make raita:
Yogurt (dahi): Well whisked and fresh yogurt makes the best raita. This raita recipe needs thick yogurt as tomato raita is better silky and smooth and not runny.
Tomatoes: The salad tomatoes work well for the raita recipe. Make sure the skin of the tomatoes used is not thick. Also, remove the seeds of the tomatoes.
Coriander leaves and mint leaves: Mint and coriander leaves complement the tomato raita very well. I was short of fresh mint leaves, therefore, I have used dried mint leaves I had in store.
Seasoning: I have used black salt to seasoning the raita.
