Raita recipes is basically a mixture of well-whisked yogurt (dahi) and vegetables/fruits/spices. A very simple and basic meal can be elevated with good raita. Not many and special ingredients are required to make raita. With some very basic and easily available ingredients, raita recipes can be prepared. Raita has cooling properties because it is basically yogurt served in a special way. Therefore during summers, it is a great idea to include raita in the diet.

Following points should be kept in mind to make decent raita:

  • Whisk the yogurt properly before using adding any other ingredients.
  • Use fresh yogurt, make sure the curd is not sour.
  • Adding little sugar doesn’t make the raita sweet, it just balances the flavors.
  • Check the seasoning and consistency and adjust the same before serving.
  • If raita has been prepared in advance, add salt at the time of serving otherwise the raita might turn tangy and bad.

Raita recipes can be served with parathas, biryani, rice preparations such as namkeen chawal, tamarind rice,  etc.
