An Indian masala which is indispensable for the dabeli recipe is dabeli masala. Dabeli is a very popular snack from the state of Gujarat. It is a kind of masala pav because it has pav filled with potato stuffing and other elements. Of all the recipes I have made using potato stuffing, be it sandwiches or samosa, bread roll, burgers, etc, dabeli has the most interesting potato stuffing. One bite of it and there is such a blast of flavours in your mouth. The dabeli masala plays a major roll in giving flavours to the stuffing. I would always buy masala from the market but then I started making Indian masala at home. And thereafter I have never used the store-bought ones. My pantry has all homemade Indian masala, be it the chaat masala, sambar masala, garam masala and so on.
Unlike the garam masala which has a long and typical list of ingredients, dabeli masala calls for a handful of the spices easily available in the pantry. Here they are:
Whole Spices: Cumin seeds, black peppercorns, cinnamon stick, and cloves are the required whole spices. These (except cumin seeds) are dry roasted to maximize the flavour.
Powdered spices: Red chilli powder and coriander powder are also required to make dabeli masala. I have used the Kashmiri red chilli powder as it is less hot. If you are using the regular red chilli powder, use half of the mentioned quantity.
Sugar: Yes, there is hardly any recipe from the Gujarati cuisine which does not call for sugar. And why not? This is why all the recipes have such an awesome balance of flavours.
As mentioned earlier I am a big fan of homemade Indian masala. Chaat masala recipe on the blog is the best recipe for it. This chaat masala has often saved my dishes. Just a dash of it adds so much zing to the snacks etc. Likewise, the homemade pav bhaji masala has its own flavor. Pav bhaji made using this pav bhaji masala and the one made using readymade pav bhaji masala tastes different in spite of following the same recipe. Here is our collection of masala you might like.
A must for the dabeli recipe, dabeli masala can be used to pep up any sandwich or paratha. It can also be used for chaat or salad.
1.This recipe makes little less than ¼ cup of dabeli masala.
2.Heat a pan. Add the whole spices i.e. 6 black pepper corns (sabut kali mirch), 6 cloves (laung), 1-inch cinnamon stick. Dry roast for a minute.
3.Take out in a plate and let it cool.
4.Collect the remaining ingredients too i.e. 2 tsp Kashmiri red chili powder, 2 tsp coriander powder, 2 tsp sugar and 1 tsp cumin seeds.
5.Transfer all the ingredients to a grinding jar and grind to make a fine powder.
6.Store in an air tight container. Ready to use! Go ahead and make awesome dabeli.
