It is a simple sandwich which is very popular in Mumbai. Bombay Masala Toast is made up of boiled and mashed potatoes and slices of onions, tomatoes, beetroot, and capsicum. It gets its kick from green chutney and sandwich masala. Bombay masala toast is topped with fine sev. It is crisp and yum. It can be prepared for breakfast or as snacks.
Simple stuffing of boiled potatoes with the tempering of curry leaves along with slices of tomatoes; onions etc are used to make Bombay Masala Toast. But what makes all the difference is the toaster that is used by the street vendors. Yes, Bombay masala toast is prepared in a typical toaster which you can see in the recipe part. I too got one for the Bombay masala toast sandwich recipe, but I love to use it for my other sandwiches too.
Here is the recipe for green chutney for sandwiches. Sandwich chutney has absolutely smooth and spreadable texture which doesn’t make the bread soggy. Sandwiches are loved by one and all; therefore we have a collection of sandwich recipes. Here it is.
1. Heat 1 tbsp oil. Add 1 tsp mustard seeds (raie) and let them crackle.
2. Add in curry leaves and ¼ tsp turmeric powder. Cook for 30 seconds.
3. Next goes in 1 cup boiled and mashed potatoes.
4. For some heat add 1 chopped green chili.
5. Mix everything and add salt to taste. Cook for 5-6 minutes.
6. Let the mixture cool down.
7. Apply butter on the bread slices.
8. Next, apply green chutney.
9. Spread the potato mixture properly.
10. Put slices of onion, tomato, and beetroot.
11. Sprinkle sandwich masala.
12. Cover with another slice and toast in a greased toaster.
13. Toast on a low to medium flame, flipping occasionally. (The toaster in the picture is what I was talking about.)
14. Cook till nice golden brown from both the sides.
15. Serve with cutting chai.

TOTAL TIME 20 minutes

• A spring of curry leaves (kadi patta) torn using hands
• ¼ tsp turmeric powder
• 1 cup boiled and mashed potatoes
• 1 chopped green chili
• Salt to taste
• 8 bread slices
• 6-8 tsp butter, at room temperature
• 8-10 tsp green chutney for sandwiches
• Sandwich masala as much required
