It is a mix of spices that peps up any gravy or appetizer. As the name suggests Kitchen King Masala is the King of spices because it takes the dishes to another level. It is commonly used, especially in North Indian gravies and curries. It is easily available at the stores but homemade is any day better. Homemade kitchen king masala can easily be stored for up to 3-4 months but I like to make small batches and use them fresh.
There is a long list of spices that are required for the homemade kitchen king masala recipe. And that is what makes this spices mix divinely flavourful. It is important to maintain the proportion of the spices used. Although the count of spices is more, they are the ones easily available in our pantries.
Another spice mix that is a must in your kitchen is chaat masala. Learn to make it here. You can use kitchen king masala in most of the gravies, especially paneer gravies. Collection of paneer curries can be found here
1. Dry roast all the spices except turmeric, black salt, nutmeg, dried ginger. Dry roast on low flame for 3-4 minutes tills the spices turn aromatic.
2. Let them cool. Thereafter transfer to a grinding jar. Add in remaining spices i.e. turmeric, black salt, nutmeg, dried ginger. (Always crush dried ginger and nutmeg and then add for grinding. Yes! I added them directly for grinding and had a tough time (especially with dried ginger), therefore suggesting).
3. Grind to make a fine powder.
4. Ready to use. Store in an airtight glass container.
