Kadhi is a tangy and spicy curry made using yogurt, gram flour and simple spices. Pakora is a deep fried dumpling made with gramflour. The two are combined to make a mouth watering dish- kadhi pakora. This is a very simple recipe for kadhi and the kadhi has been flavoured with basic spices such as red chilli powder, fenugreek seeds and mustards seeds. This recipe for Kadhi Pakora calls for
Yogurt (dahi): Kadhi can be prepared using both sour and regular yogurt. However if you like your kadhi tangy, you should use sour yogurt. I leave the fresh yogurt on my kitchen counter for a couple of hours before using it to make kadhi. I already have a recipe for kadhi using buttermilk on the blog.
Gram flour (besan): Regular gram flour has been used for kadhi and pakora both. Apart from that simple spices have been used.
1. Add 3/4 cup gram flour (besan), 1/4 tsp fruit salt or eno, 1/2 tsp red chilli powder, salt to taste and water as required in a mixing bowl and mix to get batter of dropping consistency
2. Heat oil in a kadai/pan and fry pakora
3. Deep fry pakora till golden brown
4. Take out pakora from oil, place in a plate and keep aside
1. In a big bowl add 1 ½ cup yogurt (dahi)
2. Add 6-8 cups water
3. Add 4 tbsp gram flour (besan), 1/2 tsp red chilli powder, 1/4 tsp turmeric powder, 1/4 tsp asafetida (heeng)
4. Mix well, take care to remove all lumps
5. Take a vessel put on a gas flame and heat 2 tbsp ghee
6. Add 1/2 tsp cumin seeds (jeera), 1 tsp mustard seeds (raie), 1/4 tsp fenugreek seeds (methi dana) and 1/4 tsp asafetida (heeng)
7. Stir and let it crackle
8. Add gramflour and water mix
9. Keep stiring continuously. This would ensure that the kadhi doesn’t curdle
10. Cook till it starts boiling and raw smell of gram flour goes away. Continue to cook on low flame for 40-45 minutes (afterall jo kadhi (verb) nahi wo kadhi (noun) nahi)
11. Add salt to taste
12. Check consistency and seasoning. Add water or spices as required
1. Add deep fried pakora to prepared kadhi
2. Mix well and cook for 5 minutes
1. Heat 1 tbsp ghee. Switch off the flame
2. Add 1 tsp red chilli powder in hot ghee and stir for 1 minute
3. Now add tadka in pakora khadi and mix it
4. Bon Appetite: Serve kadhi pakora with rice
