Let’s talk about the Ingredients for vermicelli Kheer

Sevai Kheer Recipe calls for

Vermicelli: I have used roasted vermicelli. Still I raosted them for a couple of minutes in ghee to enhance the flavours. I have used the regular vermicelli. You can use the finer one. However its quantity would vary.
Other ingredients: Other ingredients are the ones commonly used for making kheer i.e. milk, sugar and dry fruits.

How to make Sevai kheer

1. Heat 1 tbsp ghee

2. Add 2 cloves and let them turn aromatic (30 seconds on low flame)

3. Add 1/2 cup broken sevai or vermicelli

4. Stir and continuously roast, till sevai becomes turn light brown

5. Add 4 cups milk

sevai kheer

6. Simmer on low to medium flame. Stir occasionaly

7. When vermicelli is soft and milk has thickened, add 1/2 cup sugar and mix

8. Add 1 tbsp chironji

9. Add 1 tbsp sliced almonds, 1 tbsp raisins, 1 tbsp sliced pistachio

10. Check the seasoning and consistency

11. Add handful of rose petals

sevai kheer

12. Add 1 tsp cardamom powder and mix. Cook for 5 minutes

13. Add few saffron strands soaked in warm milk. Simmer for 5-7 minutes

14. Bon appetit: Sevai kheer can be served hot, at room temperature or chilled
