Idli is a steamed snack made using different ingredients such as rice, semolina etc. Here I have made idli using oats. Oats idli is a very light and soft idli bursting with the flavours of mustard seeds, ginger, green chillies; having the bite of fried lentils etc. Idli is an excellent breakfast option (health benefits of oats are known to one and all). Recipe using oats: I have used quick cooking oats. These oats are easily available at the grocery stores etc. You can use rolled oats for this recipe
Tempering: Oats, as such, is a bland ingredient. It is very important to add some flavours to its preparations. I have made a flavourful tempering which includes curry leaves, mustard seeds, fried lentils, ginger, chillies etc.
1. Grind 1 cup oats
2. Make a powder
3. Dry roast oats powder for 4-5 minutes on low flame
4. Transfer to a mixing bowl
5. Roast 1/2 cup semolina (sooji) and roast for 2-3 minutes
6. Add roasted sooji in the mixing bowl. Let the mixture cool down
7. Now add 1/2 cup yoghurt (dahi)
8. Add 1 cup water
9. Add 1 tsp sugar, salt to taste and 1/2 tsp turmeric powder
10. Mix well
11. Prepare tempering: Heat 1 tsp oil and add 1 tsp mustard seeds, let it splutter
12. Add 1/2 tsp chana dal and 1/2 tsp urad dal, cook it for 2 minutes till lentils become golden
13. Now add 10-12 curry leaves and 1 chopped green chilli, and cook 30 seconds
14. Add the tempering to batter
15. Now add 1 tsp ginger paste and chopped coriander leaves
16. Cover it and let it rest for 10 minutes
17. After 10 minutes, remove the lid and mix
18. Add 1 tsp fruit salt
19. Add 1 tsp water on fruit salt
20. Mix well
21. Steam idlis in idli maker for 10-12 minutes on medium flame
22. Check if done by inserting a knife. It should come out clean
23. Take out the idli moulds from steamer and leave till workable
24. When it cools down, de-mould the idlis
25. Bon Appetit: Serve oats idli with tomato ketchup or chutney of your choice
