What is Sooji ki Kachori?

Sooji Kachori Recipe – Kachori is a deep fried snack with a delicious stuffing and a flaky and crispy outer coating. Generally kachori is made using all purpose flour with the lentil or potato stuffing. Sooji is kachori is very appetizing snack having a delicious potato stuffing and made with sooji i.e. semolina instead of all purpose flour. Sooji Kachori can be made for breakfast or brunch. let’s talk about the ingredients for sooji ki kachori

For the stuffing: Potatoes are the main ingredients for the stuffing of sooji ki kachori. Potatoes have been sauted with some spices and ginger and chillies to make an absolutely lip smacking stuffing.
For the coating: As already mentioned instead of all purpose flour, semolina has been used. Semolina is cooked which makes it very pliable and easy to handle.

To Make Potato Stuffing:

1. cook ginger and chillies : heat 1 tbsp oil. add 1 and ½ tsp grated ginger. cook for 30 seconds. add 1 chopped green chilli. cook for 30 seconds.

2. add potatoes and spices and cook : add 4 boiled and mashed potatoes. mix well. add salt to taste, 1 tsp red chilli powder, 1 and ½ tsp chaat masala, ½ tsp black pepper powder and 1 tsp fennel seeds (saunf). mix everything and cook for 5-7 minutes. take it out in a plate and let it cool completely.

For Coating

1. simmer water and add salt and carom seeds : heat 1 and ½ cup water in a pan. once it comes to a boil, add salt to taste and 1 tsp carom seeds (ajwain).

2. add and cook semolina : on a low flame, gradually add ¾ cup semolina. keep stirring. make it absolutely lump free. cook till semolina comes together as a dough. switch off the flame. cover and leave for 2 minutes. thereafter take out in a plate and let it cool till it is workable. knead for 2-3 minutes till absolutely smooth.

For Sooji Kachori

1. prepare kachori : take a portion of sooji dough. flatten it on your palm. add potato stuffing. seal and shape the kachori.

2. fry kachori : heat enough oil. add kachoris in it. cook on medium to high flame till golden brown from all sides.

3. bon appétit : serve sooji kachori hot with tomato ketch up or green chutney.
