Yellow moong dal cooked to perfection tempered with spices, onions, green chilies in a very interesting manner is Sindhi Moong Dal tadka. Moong dal tadka is spicy with the tanginess of tamarind. It is further garnished with fresh coriander leaves and chopped onions which give a nice bite to Sindhi Moong Dal. It can be served with parathas or pakwaan.
Moong dal needs to be soaked and cooked properly. I soak moong dal for 30 minutes. Soaking it for a longer time might change the cooking time and ruin the texture of Moong Dal. The consistency of Sindhi Moong Dal Tadka is not the regular one. It is thicker. Tamarind paste is indispensable for Sindhi Moong Dal recipe. It adds a good tinge. Lots of spices such as red chili powder, black pepper powder, dry mango powder, coriander powder are added. You can adjust the spice level as per your taste.

1. Put ½ cup soaked moong dal in a pressure cooker. Add 1 cup water, salt to taste and ½ tsp turmeric powder.
2. Cook for 1 minute on low flame after 1 whistle on high flame. Let the pressure release. Open the pressure cooker.
3. Add 2 tbsp tamarind paste.
4. Put cooked dal in serving bowls. Sprinkle spices i.e. red chili powder, coriander seeds powder, dry mango powder, black pepper powder. Add 2 tbsp chopped onion and 1 chopped green chili.
5. Heat 2 tbsp oil.
6. Once the oil is hot, super hot, pour on the dal.
7. Garnish with chopped coriander leaves and chopped onions. Serve immediately. Bon appétit.

For cooking Moong Dal
• ½ cup moong dal (soaked for 30 minutes)
• 1 cup of water
• Salt to taste
• ½ tsp turmeric powder
• 2 tbsp turmeric paste (or as per taste)
For tempering
• 1 tsp red chili powder
• ½ tsp black pepper powder
• 1 tsp coriander seeds powder
• ½ tsp dry mango (amchur) powder
• 2 -3 tbsp chopped onion
• 2 chopped green chilies
• 2 tbsp oil
For Garnish
• A handful of chopped coriander leaves
• Chopped onion (as much required)
