What is Sattu Paratha?

Stuffed paratha prepared with chana sattu flavored with pickle masala, onions, fresh coriander leaves, green chili, and carom seeds, etc. is sattu paratha. Sattu is a very popular bihar food. And due to the sattu benefits, it is becoming popular. Sattu paratha is an easy and simple way of adding sattu in the diet. Sattu paratha can be served with yogurt for breakfast, lunch or easy dinner recipe.

Let’s talk about the ingredients for Sattu Paratha Recipe

Sattu is basically the ground form of roasted cereals or pulses. I like to make and stock up sattu and use it in various recipes. Litti chokha is the most common sattu recipe as well as the most popular bihar food. Litti chokha recipe is a bit time taking and litti calls for its accompaniments, therefore, paratha prepared with chana sattu powder is my on the go dinner dish using sattu. Let’s have a look at its ingredients:

Sattu: Sattu can be prepared with split Bengal gram (chana), whole wheat (gehun) or barley (jo) or a combination of any of these. The sattu paratha has been prepared using chana sattu.

Other ingredients for stuffing: The ingredients used to flavor litti stuffing are used to make the stuffing for sattu paratha. These include pickle masala, mustard oil, onion, chilies, fresh coriander etc. I have used the mango pickle masala. You can also use the chili pickle masala. Further lemon juice, red chili powder can also be added to the sattu stuffing. Since my pickle masala was hot and tangy enough I have skipped these. Garlic paste has also been used to flavor the sattu parathas.

Dough for paratha: The dough for paratha should be softer than the dough for chapati otherwise it doesn’t expand properly. Further, it should be well-rested otherwise it tears on being rolled.

How to make Sattu Paratha?

1.This recipe makes 6-8 sattu paratha.

2.In a mixing bowl add 1 cup sattu, ¼ cup chopped onion, 1 chopped green chili, a handful of chopped coriander leaves, 1 tsp carom seeds (ajwain), 1 tsp ginger paste, 1 tsp garlic paste, salt to taste, 2 tbsp pickle masala and 2 tbsp mustard oil.

3.Mix everything. Taste the stuffing. Adjust the same if required.

Tips:The consistency of the stuffing should be bind able. If required add in more mustard oil and if you don’t like the pungency of mustard oil, add water.

4. Take a portion of the dough and roll it into a thick and small chapati.

5.Stuff in the sattu mixture.

6.Seal it.

7.Roll into a paratha of the desired thickness. Meanwhile heat a pan or skillet.

8.Put the rolled paratha on the hot skillet.

9.Once slightly cooked from one side, flip and cook from the other side. Add ghee on both the sides.

10.Cook till golden brown. Grease with ghee.

11.Serve hot. Bon appétit!
