In this pani puri recipe, I have discussed the basic and most common pani puri pani recipe, as served by the street vendors as well as another version of pani puri which will be relished by the ones who don’t like very spicy pani.

Just as the pani puri , the pani puri recipe too can be prepared in different ways. Here I have shared the most basic recipe of the masala, again, as used by the street vendors, i.e. the potato masala. Stuffing can also be prepared with sprouts etc.

Further as regards the puri, I have used the readymade puri. I have yet to try my hands on homemade puri for pani puri.

How to make Pani Puri Recipe; A look at the ingredients:

Well as already discussed there are 3 elements of pani puri.

Puri: I have used readymade puri. Even readymade puris have so many choices i.e. made with sooji, atta, dal flour, etc. I like the smaller puri as these are easier to eat.

Pani for pani puri: I have shared 2 pani puri water recipes. First is the basic and most common pani puri pani recipe is coriander based. Powdered spices such as roasted cumin seeds powder, black salt, black pepper powder, red chili powder, jaljeera powder, etc. have been used. This is the teekha pani. Another one is the khatta meetha pani. It is prepared with tamarind pulp and powdered sugar along with other spices.

Pani Puri Masala: Boiled potatoes form the base for the pani puri masala. Powdered spices, along with chutney, tamarind pulp, crushed puri, and salted boondi are added to prepare absolutely street style pani puri masala.

Recipe Pani Puri: Things to be kept in mind

Tips for perfect pani puri:

  1. Choose absolutely crisp puri.
  2. The flavors of the pani for pani puri can be adjusted as per your taste. Taste the pani and adjust the seasoning. This recipe gives perfectly balanced flavors in the pani. However, you can make the changes as per your liking.
  3. Pani puri masala is prepared with boiled potatoes. Do not mash them completely. Use cold i.e. refrigerated potatoes for the pani puri masala.

Pani Puri ka Pani

1.This recipe makes 2 cups of pani.

2.Teekha Pani: In a grinding jar add 1 cup chopped coriander leaves, ½ cup mint (pudina) leaves, 1 chopped green chili, 1” piece of ginger, chopped, juice of a half lemon and black salt to taste.

3.Grind to make a smooth chutney.

4.In a mixing bowl take 2 cups of water.

5.Add 2 tbsp of prepared chutney. Mix well.

6.Pass it through a sieve.

7.Add the spices i.e. black salt and salt to taste, 2 tsp roasted cumin seeds powder, 2 tsp jaljeera powder, 2 tsp red chili powder, 1 tsp black pepper powder. Mix well.

8.Next add 2 tbsp of tamarind (imli) pulp. Add tamarind pulp gradually, as the consistency of the pulp differs and so the required quantity could vary. Mix well.

9.Taste the water. Adjust the flavors if required.

10.Add a handful of salted boondi. Keep aside for now.

11.Khatta Meetha Pani: This recipe makes 2 cups of pani for pani puri.

12.In a mixing bowl add 2 cups of water.

13.Add ½ cup tamarind pulp.

14.2 tsp roasted cumin seeds powder, 1 tsp red chili powder, 1 tsp black pepper powder, black salt and salt to taste and 3 tbsp powdered sugar. Mix everything.

15.Add a handful of salted boondi.

16.Keep aside for now.

Pani Puri Masala

1.This recipe is enough for 40 puri.

2.In a mixing bowl take 4 boiled and coarsely crushed potatoes.

3.Add black salt to taste, 1 tsp red chili powder, 1 tsp cumin seeds powder (jeera), 1 tbsp green chutney prepared for teekha pani, ½ tbsp tamarind pulp, 2-3 crushed puri, 1-2 tbsp salted boondi.

4.Mix everything.

5.Add 2-3 tbsp of chopped onions and mix. This is optional.

6.Keep aside.
