What is Nawabi Paneer?

Nawabi Paneer is a main course dish using paneer which is cooked in rich and flavorful gravy prepared using onions, ginger, garlic, whole spices, yogurt etc. It gets its richness from nuts i.e. almonds, cashews and its flavors from whole spices, kewra water and any fresh ingredients including ginger, garlic etc. This paneer recipe is a famous Hyderabadi curry which can be served at parties, during a family gathering or on festivals. Let’s talk about the Ingredients for Paneer Recipe

Nawabi Paneer Recipe calls for

Paneer i.e. cottage cheese- I love to use homemade paneer for most of the paneer recipes that I make as it gives me the best results.
Gravy – I have already discussed that the gravy calls for many ingredients. No tomatoes or red chili powder has been used.

How To Make Nawabi Paneer Recipe

1. Soak 2 tbsp poppy seeds and 10 cashew and almonds each for 10-12 minutes

2. Heat 2 tbsp clarified butter (ghee)

3. Add 1 tsp cumin seeds and let it crackle

4. Add 1 bay leaf, 1-inch cinnamon stick, 4 cloves, 3 green cardamoms. Cook till aromatic

5. Add 2 medium sized chopped onion

6. Stir and cook till onion gets turn translucent i.e. pinkish

7. Now add 2 chopped green chili, 12-15 garlic cloves and 1 inch chopped ginger

8. Cook 1-2 minutes

9. Add soaked poppy seeds, cashew, and almonds

10. Mix well and cook 2-3 minutes. Thereafter let the mixture cool down

11. Add mixture in a grinder jar and grind it

12. Add 1 tbsp milk

13. Grind to make a fine paste

14. Heat 1 tsp ghee in a pan

15. Add ground mixture

16. Stir and cook till its gets of light golden color

17. Add 1/2 cup yogurt (dahi)

18. Mix and cook

19. Stir continuously till it’s thick

20. Add salt according to taste and black pepper powder

21. Now add 1 cup milk. You can water instead of milk

22. Mix and cook for 2-3 minutes

23. Add paneer cubes

24. Finish off with 1 tsp fenugreek leaves

25. Switch off the flame and add 1 tsp kewra water and mix

26. Add saffron soaked in milk

27. Add 1/2 tsp sugar

28. Cover with lid and cook for 6-7 minutes
