What is Malai Kofta?

Malai Kofta is a main course preparation which includes soft dumplings served in a creamy and delicious gravy. There are different recipes for kofta. This particular gravy is very flavourful, with lots of whole spices, ginger and chili flavors. Generally, kofta is on a sweeter side but this recipe gives a sweet break from those sweet gravies. Kofta can be served with butter naan, chapati, paratha etc. This recipe deserves a try because it is a

Let’s talk about the Ingredients for Malai Kofta

Kofta: Boiled potatoes and cottage cheese (paneer) have been used to make kofta for kofta. It has been flavored with ginger and green chilies.
Gravy: A rich onion tomato based gravy has been prepared. I have added cashews for the richness. You can add heavy cream too.

To Prepare Gravy

1. Heat a pan and add 1tbsp oil and 2 tbsp butter

2. As the butter melts, add 1 tsp shahi jeera, 2 black cardamoms, 3 green cardamoms, 3 cloves, and 1-inch cinnamon stick. Cook till aromatic.

3. Add 1 cup chopped onion

4. Cook till translucent

5. Add 1 green chili, 1 tbsp garlic, and 1 tbsp ginger. Cook for 1 minute

6. Add 1 tbsp Kashmiri red chili powder, 1 tbsp coriander powder, 1/2 tsp turmeric powder and 1/2 tbsp cumin seeds powder. Cook for 1 minute

7. Add 2 cups chopped tomatoes

8. Add 12- 15 cashew. Cook for 3-4 minutes

9. Add 2.5 cups water

10. Cover with lid and cook till cashew and tomatoes become soft

11. Remove the lid and let it cool down

12. Put in a grinder

13. Make a smooth puree

malai kofta

14. Pass through a strainer

malai kofta

15. Cook the smooth puree for 5-7 minutes

16. Add 1 tsp dry fenugreek leaves

17. Add 1/2 tsp sugar (optional). Add 1/4 cup heavy cream and mix. Gravy is ready. Keep it aside for now

To make Kofta

1. In a mixing bowl add 1 cup cottage cheese

2. Add 1 cup boiled and mashed potatoes

3. Add 1 chopped green chili and 1/2 tbsp chopped ginger

4. Add 1 ½ tbsp corn flour, 1/2 tsp white pepper powder and salt to taste

5. Mix well

6. Divide the mixture into equal parts and make kofta of desired shape or size

7. Heat oil and add kofta in hot oil

8. Fry on low to medium flame till golden brown

9. Fry all kofta and keep aside

10. To serve malai kofta, in a bowl place kofta

11. On it add the gravy
