A brownie that’s hard to believe is made up of whole-wheat. I have used walnuts and chocolate chunks to garnish the brownie. I didn’t add it to the brownie. You can even add some or a lot of nuts of your choice and chocolate chunks/chips to the brownie.
1. Preheat the oven to 170 degree Celsius (150 in case of fan or convection oven). Grease and line a baking dish preferably a 7*11
2. Collect and measure the ingredients
3. Sieve the dry ingredients together i.e. 2 cups less 2 tbsp wheat flour, 2 tbsp corn flour, 1 tbsp milk powder, 1 and 1/4 tsp baking powder, 3/4 tsp baking soda, 1/2 cup plus 1 tbsp cocoa powder and a pinch of salt
4. Sieve 2-3 times
5. Keep aside
6. Mix 1 cup curd and 1 cup sugar which has been powdered
7. Mix until the sugar dissolves
8. Add 1/2 cup oil
9. Add 1 tbsp melted butter
10. Add 1 tsp vanilla essence. I am using scrape from the vanilla pod
11. Add the sieved dry ingredients to the wet ones
12. Add 1/4 cup coca cola
13. Fold in everything gently
14. Pour into the prepared baking pan
15. Garnish with chopped walnuts and chocolate chunks
16. Bake at 170 degree Celsius (150 in case of fan or convection oven) for 25-28 minutes or till done. Once baked, let it cool completely before cutting
