Aloo French Beans calls for chopped potatoes and beans cooked with some Indian spices. I have shallow fried in little oil. It is important to NOT overcook the beans, after beans should remain green.
Lemon juice can be added instead of dry mango powder.
You can add garam masala.
1. Heat a pan and add 2 tbsp oil.
2. Once it is hot, add 1/2 tsp mustard seeds and let them crackle.
3. Add 1/2 tsp cumin seeds and let them be aromatic.
4. Add one pinch asafetida.
5. Add chopped 3 medium potatoes.
6. Add salt to taste.
7. Mix well.
8. Cover with lid and cook for 2-3 minutes.
9. Check potatoes. They must be half cooked.
10. Add one cup chopped beans.
11. Mix beans with Potatoes.
12. Add 1 tsp coriander powder, 1/4 tsp turmeric powder, 1 tsp red chilli powder. Mix well
13. Cover it with lid and cook till beans are soft.
14. Add 1/4 tsp dry mango powder and ground black pepper.
15. Take out Aloo Beans curry in serving bowl and enjoy it paratha, roti or as a side dish with rice and sambar.
