Akki Roti Recipe | How to make Akki Roti

What is Akki Roti?

Akki Roti belongs to Karnataka cuisine. Akki means rice and roti means flatbread which implies that akki roti is a flatbread prepared using rice, rice flour to be practical and particular. Well, this is not it. Akki roti has much more to it. Vegetables such as carrot, bottle gourd, etc are added which makes the akki roti. Onions are added for some bite, likewise soaked chana dal is also used. Fresh coconut, coriander leaves, green chili, ginger, cumin seeds are used to flavor the akki roti. Akki roti recipe is pretty simple. The best part is that it can be customized as per convenience and liking. You can add in the veggies of your choice, you can make it thick or thin (as such making thin is not a choice available to many as it requires some practice). Having said that, rolling akki roti could be a tricky thing for the new bees. Traditionally it is prepared using a banana leaf or a wet cloth with wet hands. I have prepared it on parchment paper. You can also prepare it on the skillet or pan directly. Akki roti can be served with chutney of your choice. In this post, you will find step by step pictures of how to make akki roti?

Ingredients for Akki Roti

Rice Flour: Fine, fresh and good quality of rice powder is needed to make akki roti. It is a good practice to sieve rice powder once before use.

Vegetables: Carrot, onion, fresh coriander, green chilies, ginger have been used. You can also use fresh coconut, curry leaves etc.

Spices: Cumin seeds and salt to taste have been used.

Other ingredients: Other than the aforementioned ingredients, oil has been used.

How to make best Akki Roti?

Perfect akki roti is soft, has the bite of crunchy vegetables, is mildly flavored and perfectly cooked. In order to make the best akki roti following points should be kept in mind:

  1. Sieve the rice flour.
  2. Add carrot or bottle gourd as it makes the akki roti soft.
  3. The consistency of the dough for akki roti is very important. It should be absolutely soft.
  4. Do not overcook akki roti. Overcooking will make it hard.

1.This recipe makes 4 Akki Roti.

2.In a mixing bowl add 1 grated carrot, 1 chopped onion, a handful of chopped coriander leaves, 1 chopped green chili, and 1” grated ginger.

3.Next add in ½ tsp of cumin seeds (jeera) and salt to taste.

4.Mix everything well.

5.Next add in 1 cup of rice flour (chawal ka atta).

6.Mix it well with all the ingredients.

7.Add in 1 tbsp of oil.

8.Gradually add water.

9.Make a soft and smooth dough.

10.Divide it into 4 portions. (I have prepared half of this recipe and therefore I prepared 2 akki roti).

11.Grease a parchment paper and place one portion of the dough on it.

12.Spread it till you get the desired thickness. And make a few holes in it as shown in the picture. Use wet fingers to spread the dough.

13.Meanwhile heat a tawa/skillet or pan and grease it with little oil. Keep the flame on medium.

14.Pick the parchment paper and reverse it on the tawa. (You can use cloth, banana leaf instead of parchment paper).

15.Remove the paper.

16.Let it cook.

17.Once it is cooked from 1 side flip it.

18.Cover and cook it.

19.Cook till brown patches appear on both the sides.
