Stuffed Appe Recipe | How to make Stuffed Appe | Paniyaram Recipe

Stuffed Appe Recipe – Appe/ Paniyaram is a popular south Indian breakfast, known by different names. Appe are prepared by steaming the idli dosa batter in a special pan. They are crunchy from outside and soft and spongy from inside.You can add vegetable such as peas, carrot, capsicum, onion, tomato etc to the batter. You can flavour it with ginger, chillies, curry leaves etc.

How To Make Stuffed Appe

1. Prepare the filling : In a bowl take 3 boiled and mashed potatoes. Add salt to taste, 1/2 tsp red chilli powder, 1/4 tsp black pepper powder and 1/2 tsp dry mango powder and handful of chopped coriander. Mix everything well. Make small lemon size balls.

2. Prepare the batter for appe : In a bowl add 1 cup semolina, 1/2 cup yogurt, salt to taste and 1/4 cup water. Let it rest for 10-15 minutes.

3. Add fruit salt : After 10-15 minutes add 1/2 tsp fruit salt and mix well. The mixture will become fluffy.

Tips:Add fruit salt just prior to frying the appe.

4. Make appe : Add few drops of oil in the appe pan. Once it’s hot add few mustard seeds. Let them crackle. Add a spoonful of appe batter. Place the potato ball. Cover with some more batter.

5. Fry appe : Fry appe till the bottom turns golden. Flip and cook from the other side too till it turns golden. You have absolutely crisp and beautiful golden appe. This is the “wow moment” of the recipe.

6. Bon appétit : Serve appe with coconut chutney or green chutney or ketch up.
