Assorted vegetables are coated with a simple yet yummy marinade and are baked to make healthy veggie shots. This is a great starter recipe as it allows customization, you can choose any vegetables of your choice. It is pretty simple and fuss-free to make. They look great because of assorted vegetables the dish looks colorful.
I have used very easily available vegetables i.e. potatoes, onions, capsicum and paneer for the recipe. You can use any of your choices. A simple marinade, as simple as a green chutney has been used. Roasted gram flour is the binding agent. To prepare the same just dry roast gram flour on low flame till aromatic. Cool it and then use it.

1. Grind together 1 cup chopped coriander leaves, 1/2 cup mint leaves, 1 garlic clove, 1” piece of ginger, 2 chopped green chillies, 1 tsp lemon juice, salt to taste, 1/2 tsp cumin powder. Add a little water if needed
2. Empty it in a large bowl
3. Add 1 tbsp roasted besan. Mix well
4. Add the assorted vegetables to the marinade. Leave for 15-20 minutes
5. Soak the skewers in water
6. After 15-20 minutes, add the vegetables to the skewers. You can make different combinations of your choice
7. Add 1 tsp oil and heat it
8. Add the vegetables shots and cook till they turn golden
9. Flip and cook from the other side also
10. Once done, brush some butter, sprinkle little chaat masala and lemon juice.
11. Garnish with onion rings and serve
