Tender and delectable shortbread made wholly with besan (gram flour) with a hint of elaichi (cardamom) and unbeatable flavor of ghee is besan nankhatai. It calls for a few ingredients which are easily available. This Besan Nankhatai Recipe has been prepared in kadai. I have used salt in a heavy bottom wok. You can also use sand. This recipe demonstrates baking without an oven.
Gram Flour (besan): Gram flour and only gram flour has been used to make this shortbread. Thus it is a gluten-free dessert. Regular gram flour is required to make besan nankhatai.
Ghee: It is important to use only melted ghee for this recipe. Do not add excess ghee. Only that much should be added as much is required to bring the dough together.
Other Ingredients: Powdered sugar has been added. For flavoring cardamom powder and for garnish chironji have been used.
You might also like absolutely melt in mouth nankhatai, which is super easy to make. Likewise, eggless saffron cookies are the cookies which burst with Indian flavors.
Besan Nankhatai can be served as a dessert or as a tea time snack.
1. Take a heavy bottom Kadai (wok).
2. Add 1-2 cup salt.
3. Place a stand in the wok.
4. Cover and let it heat.
5. Sift 1 cup besan.
6. Now add 1/2 cup powdered sugar.
7. Add 4 elaichi powdered.
8. Addition 1/2 tsp baking powder and mix everything.
9. Add melted ghee to bring the dough together.
10. Bring the dough together.
11. Make balls with the dough and flatten them.
12. Press in the nuts of your choice.
13. Place the baking plate in the preheated wok.
14. Cover it and let it bake for 10 minutes or till done.
15. Once it’s done, take it out, let it cool and then de-mould.

• 1/2 cup or 100 g melted ghee (clarified butter)

• 4 elaichi (cardamom) powdered
• Handful of nuts for garnishing

15. Once it is done, take it out, let it cool and then de-mould.
