Indispensable for roti upma recipe is fresh coriander leaves and lemon juice. Now a tricky part about the leftover roti upma recipe is how much water to add because it is important that the chapati pieces become soft but at the same time, they should not turn mushy. Add water gradually, lets the rotis absorb it, then sprinkle more as much required.

1. In a pan, heat 1 tbsp oil.
2. Add 1 tsp mustard seeds and let them crackle.
3. Add 2 chopped onions and cook till translucent. Add 1 boiled and chopped potato.
4. Add 1 tsp garlic paste.
5. Cook till the smell goes away.
6. Add 3 pureed tomatoes and cook till the oil oozes out.
7. Add 2 chopped green
8. Add chapatti pieces.
9. Add 1 tsp coriander powder, 1/2 tsp red chili powder, 1/4 tsp turmeric powder.
10. Add salt to taste.
11. Mix everything gently.
12. Add water as required.
13. Cook for 2-3 minutes.
14. Add lemon juice.
15. Garnish roti upma with chopped coriander. Bon appetit!!

• Handful of chopped coriander for garnishing
