Dahi Bhalla Papdi Chaat Recipe with step by step pictures: Dahi Bhalla are deep-fried lentil dumplings that are soaked in water and squeezed to make absolutely soft and melt in the mouth snack. When the bhallas are combined with crisp and flaky papdi, along with chutneys, spices, and cold yogurt, it becomes Bhalla papdi chaat. It is absolutely toothsome with the kick of chutneys, a spark of spices, and the coolness of yogurt. Bhallas and papdi give a good contrast between softness and crispiness. Dahi Bhalla chaat can be prepared and served as an appetizer or as a snack.
Dahi Vada: I have already shared on the blog the recipe for dahi vada using urad dal. This recipe makes awesome bhallas.
Papdi: Likewise the recipe for papdi gives absolutely flaky and perfect papdi, which does not get soggy in the chaat.
Yogurt: Thick and creamy yogurt works great for dahi Bhalla chaat. Make sure that the yogurt is fresh and thick.
Spices: I have used dahi bada masala to season the Bhalla chaat. You can find the recipe here. This recipe is a mix of a number of spices that complement the chaat very well.
Chutneys: You can use any chutney for chaat to spice up the dahi Bhalla chaat. I have used only green chutney and imli ki chutney. You can also use garlic chutney.
Garnish: I have garnished the dahi Bhalla chaat with some pomegranate seeds and namkeen. You can also garnish it with coriander, mint, etc.
