What are Cheesy Veggie Bites?

Crispy bread roundels topped with juicy sweet corn kernels, crunchy onions, and colorful bell peppers, making up for a great party appetizer or kids’ friendly recipe are cheesy veggie bites. Frankly, this recipe was a way to use the bread roundels leftover after shaping the cheesy veg discs. And believe me, these were a bigger hit. These bite-sized snacks are loved by everyone. And are very convenient to make in spite of being so inviting.

Let’s talk about the ingredients for Cheesy Veggie Bites

Bread Slices: White bread will pop up the colors better. However, it is your choice. The bread slices need to be cut into bite-sized roundels. The leftover bread can be used to make instant bread crumbs or bread poha etc.

Veggies: Boiled sweet corn kernels, bell pepper, and red onions go into the stuffing rather topping. You can add or omit vegetables are per your choice. For instance, you can also add in baby corns, mushrooms, etc.

Cheese: Grated, as well as chopped cheese, have been added. I have used the processed one. You can go for any of your choices.

Seasoning: The shots have been finished with Italian seasoning and red chili flakes.

How to make Veggie Cheesy Bites?

1.This recipe makes 25-30 bites. (If the bread slice is cut into 3 roundels).

2.In a mixing bowl add 1/3 cup boiled sweet corn kernels, ¼ cup chopped bell peppers, ½ cup chopped onions, ¼ cup grated cheese and ¼ cup chopped cheese. Also add in 2 tbsp of tomato ketchup and salt to taste (be careful, as cheese and ketchup are already salty). Mix well. Check and adjust the seasoning.

3.Cut the bread slices into bite size roundels. You can use a cookie cutter or cap of any container or a small bowl for this purpose.

4.Butter the roundels.

5.Spread the prepared cheesy veggie mixture on the buttered slices. Put them on a pre-heated pan. Cover and cook till the bread is crisp.

6.Sprinkle little Italian seasoning and red chili flakes. Serve hot. Bon appétit!
