What is a cucumber sandwich?

An absolutely refreshing sandwich which has a delicious sandwich spread with the crunch of cucumber and creaminess of cream cheese alike is cucumber sandwich. It is an easy sandwich recipe and calls for a few ingredients. Cucumber sandwich is beyond the sandwich bread with cucumber salad. It has a nice sandwich spread, which makes it filling. As a result, the recipe can be an easy dinner recipe or an easy lunch recipe.

Let’s talk about the ingredients for Cucumber Sandwich Recipe:

Sandwich bread: I have used white sandwich bread for better pictures so that the green pops out. If you see the process pictures, brown bread has been used. Basically, you can work with any sandwich bread of your choice.

Cream Cheese Substitute: I am a big fan of cream cheese recipes. I love to make dips, spreads, and icings with it. But it is expensive and perishable, therefore unless I am sure of using it in toto I don’t buy the pack from the market. Instead, I make a substitute for cream cheese at home which works very well. In this recipe also the same has been done.

English Cucumbers: My sabjiwala calls it Chinese cucumber. These are the greener cucumbers, different from the desi ones, which are used with the peel. These work best for this sandwich recipe.

Cheese: If you are a fan of cheese sandwich recipes we have some good news for you.  Cucumber sandwich is a cheese sandwich too. Cheese complements the cucumber sandwiches very well.

How to serve Cucumber Sandwich?

Breakfast is a very obvious answer. You can also serve a cucumber sandwich for a light lunch or as a tea time sandwich.

How to make cucumber sandwich?

1.This recipe makes 5 cucumber sandwiches.

2.Let 2 cups of milk come to a boil. Once it boils, switch off the flame and add in juice of 1 lemon.

3.Stir slightly so that the milk curdles. Strain the curds i.e. paneer through a muslin cloth place on a colander. Add in cold water so the paneer cools quickly.

4.Squeeze out all the water.

5.Transfer the paneer in a blender jar along with 1 tbsp yogurt and 2 tbsp green chutney.

6.Blend to make a spread. Check the consistency. It should be smooth.

7.In a mixing bowl add the above spread, ½ of a cucumber which has been grated, ¼ tsp white pepper powder and salt to taste. Be careful with the salt. There is salt in the green chutney added to the spread and in cheese which is to be added.

8.Mix well. Check and adjust the seasoning.

9.Apply butter on the bread slices.

10.Next apply the above cucumber cream cheese (if I can say so) generously on one of the slices. I forgot to click a picture of this step.On the second slice, arrange the cucumber slices. Top these with grated cheese.

11.Cover with the slice having the cucumber cream cheese.

12.Serve at room temperature or cold. Bon appétit!
