Rice cooked in a manner that removes the starch present in it is the rice cooked without starch. Rice is the comfort food for many. It is composed of carbohydrates and nutrients. Carbohydrates are important but excess of anything is harmful. Excessive intake of carbs can cause indigestion, obesity and a big no-no for the diabetics as well as the weight watchers. Therefore this method can be used to reduce the starch content of rice. However, along with the carbs, few vital nutrients are also lost by cooking rice in this manner, so make sure to compensate the same by adding in some vegetables/dals in your diet.
P.S. Portion control is the key.

Rice: Certainly this method can be used to de-starch any rice, white or brown, whole or broken, etc.
Water: Water in enough quantity is required to make rice without starch. I use 3 times water for boiling rice and a lot more for rinsing the same.
Time: Timing varies… depending on the quality of rice and water, of course, I mean rice. It might take 10-12 minutes to cook the rice.
Salt: Salt is added to the boiling water.
With some cooked rice by your side, you can make a number of recipes such as tawa pulao, fried rice, tomato rice and many more.
Prepare rice in the given manner and serve with any dal or gravy of your choice. However, I love to make dal tadka, chawal, sookhe aloo, and green chutney along with chapatis for a comfortable weekday dinner.
1.This recipe serves 4-6 persons.
2.Add 3 cups of water in a pan.
3.Let it come to a rolling boil.
4.Drain away the water in which rice was soaked and add soaked rice to the boiling water.
5.Also add in the salt to taste.
6.Cook rice on high flame for 5 minutes and thereafter on low flame for 3-5 minutes.
7.Check rice for doneness. For that take a cooked grain and press between your fingers. It should be soft.
8.Once the rice is cooked drain the water. Be careful while doing so. Wash rice with cold water till starch is totally removed i.e. on washing the rice you get clear water and there is no white water i.e. starch.
9.Further if you like your rice softer just put the cooked rice in a pan or wok. Cover and cook. Place a heavy skillet under the pan to avoid burning of rice. Cook on low flame for 5-7 minutes. This is steaming of rice.
Tips:This step is totally optional. If you like perfectly cooked rice but wish to steam them, without making them too soft, stop cooking the rice in step 6 till rice is 90% cooked. Remaining cooking will be done by steaming.
10.Switch off the flame. Let rice sit for 10-12 minutes. Thereafter puff using a fork.
11.Serve hot. Bon appétit!

TOTAL TIME 20-15 minutes + 45 minutes passive time
