A refreshing combination of yogurt and grapes is grapes raita. It is an interesting raita recipe, which can be served with pulao or gravies. The raita calls for both green as well as black grapes. You can also add in red ones if available.
Any raita is a combination of yogurt and the other main ingredient, for instance, grapes in case of grapes raita. The other ingredients include rock/black salt, sugar, roasted cumin seeds powder, etc. What is important is that yogurt should be well whisked. You can adjust the sugar and spices as per your taste and the taste of grapes used. I generally like my raitas at the room temperature but a few tastes best when served chilled, this one being one of them.
Other raita recipes that can be a part of your lunch menu this summer are lauki ka raita, mint raita, etc. Lauki is easy to digest and is one of the favorite summer vegetables. Grapes raita can be served with vegetable biryani and masala papad for weekend lunch.
1.Take 2 cups well whisked chilled yogurt in a mixing bowl. Add 1 tsp roasted cumin seeds powder and black salt (kala namak) as per taste.
2.Add ½ cup each green grapes and black grapes, cut into halves. Fold them in.
3.Next goes in 1 tsp sugar. Use powdered sugar for better and quick results. I found granulated one handy and added that, but it took longer to dissolve.
4.Sprinkle ½ tsp freshly ground black pepper (kali mirch).
5.Mix everything well.
6.Chill grapes raita for 15-20 minutes. Serve cold. Bon appétit!
