Chai from the streets of Mumbai, with a difference! Yes, I have been making tea all my life but one morning I thought of making cutting chai for the blog and me (wink). And without expecting much I sipped it and was surprised to relish the difference between a cutting chai and a normal chai. Cutting chai has strong flavors of cardamom and ginger. It is creamier than the regular ones. It gives a better kick, you know what I mean if you are a chai lover.
It doesn’t call for any special ingredients. Like most of the chai, cutting chai too is a combination of milk, water, sugar, some cardamom, and little ginger. But what makes it different is the way it is prepared. Cutting chai is simmered and brewed at every stage. It calls for slightly more time than the regular chai. Sugar level can be adjusted as per taste.

1. Pour 1 cup water in a pan and let it simmer.
2. Add ½ inch grated ginger.
3. Put powdered seeds of 4 cardamoms.
4. Simmer for 3-4 minutes.
5. Add 2 tsp chai patti. Brew for 2 minutes.
6. Add in 1 cup of milk.
7. Now add 4 tsp sugar.
8. Boil cutting chai 7-8 times.
9. Strain.

COOK TIME 10 minutes
TOTAL TIME 12 minutes
