Murmura i.e. puffed rice: I have slightly dry roasted murmura to make it crunchier.
Chutneys for chaat: Coriander chutney, garlic chutney and tamarind chutney are the lifeline of bhelpuri. The add great flaovurs to it.
Papdi: I love to use homemade papdi for my chaat recipes. They are fresh and so crisp.
1. Take 2 cups puffed rice in a pan and dry roast them for a couple of minutes
2. Transfer in a large bowl and let them cool down
3. Collect chopped vegetables that is 1 cup boiled and chopped potato, 1/2 cup onion chopped and 1/2 cup chopped tomato
4. Sprinkle chaat masala as per taste
5. Break 4 papdis and add to murmura
6. Add 1/4 cup sev
7. Sprinkle salt and red chili powder as per taste
8. Add chopped and seasoned onions, tomatoes and potatoes
9. Add 1/2 tbsp garlic chutney, 1 tbsp green chutney and 2 tbsp tamarind chutney. Mix well
10. Garnish with chopped fresh coriander leaves and sev

• handful of chopped coriander leaves for garnish
