Aloo Paratha is a shallow fried Indian flat bread which is stuffed with a potato mixture. Restaurant style aloo paratha is different from the regular aloo paratha. It is softer and melt in mouth. Aloo paratha recipe is a
recipe using potatoes: it is important to keep few things in mind while boiling potatoes i.e. do not over boil them, once they are soft do not leave them in water and always refrigerate potatoes before use for best results
other ingredients: perfect dough for paratha is critical for any paratha. Here I have used a mix of all purpose flour (maida) and whole wheat flour to make the dough. Apart from that simple spices have been used.
1. For dough for paratha: Take 1 cup wheat flour, 1 cup all purpose flour (maida), 1 tsp oil and salt to taste
2. Mix all ingredients
3. Bring the dough together with the help of water
4. Knead soft dough
5. Let the dough rest for 15-20 minutes
6. For potato stuffing: In a mixing bowl add 4 boiled and mashed potatoes, 1 tsp red chilli powder, 1/2 tsp black pepper powder, 1 tsp coriander powder, 1 tsp garam masla powder, 1 tsp dry mango powder and salt to taste
7. Mix all the ingredients
8. Check and adjust the seasoning
9. Add handful of chopped coriander leaves
10. Mix well
11. Divide mixture into portions as per the desired size of paratha
12. Take a portion of dough, make a ball and flatten the dough ball
13. Spread dough to make a small chapati and put stuffing and seal it
14. Roll the dough with the help of rolling pin as per the desired thickness
15. Heat a skillet or pan and cook on low to medium flame using oil
16. You can poke the paratha with the help of a knife to make it crispy
17. Once golden brown from both the sides, take paratha on a kitchen towel
18. Crush paratha with light hands and grease with butter
