Paneer Bhurji is crumbled cottage cheese cooked with tomatoes, onions and some basic spices. Paneer bhurji gives a break from otherwise sweet kind preparations of paneer. It tastes awesome with bread slices or simple chapati or parathas.
Paneer Bhurji is a less pampered preparation of paneer. It calls for the most basic ingredients such as onions, tomatoes, regular spices. To add some moisture to paneer bhurji I like to add some milk. Do not skip that. It makes the paneer bhurji really tasty.
1. Heat 2 tbsp oil. Add 1/2 tsp cumin seeds. Once they crackle, add 3/4 cup chopped onions. Cook till they are pink. Do not overcook the onions.
2. Add 1 and 1/2 cup pureed tomatoes. Cook till the oil oozes.
3. Add 3/4 tsp red chili powder, 1/4 tsp turmeric powder, 2 tsp coriander powder, and salt to taste. Cook for a minute. Add 1/2 tsp ginger paste and 1 finely chopped green chili. Cook for another minute.
4. Add 2 tbsp milk. Add 2 cups crumbled paneer. Mix well to bring everything together. Do not cook for more than 2-3 minutes. The paneer might harden.
5. Add 1/2 tsp pav bhaji masala and 1 tsp kasuri methi. Mix well.
6. Serve paneer bhurji with butter toast.
