Sheer Khurma Recipe – Celebrations are so important. They bring so much positivity, love and food.
I have a specific pattern of posting on the blog. Specific days, I mean. But today my husband insisted that we should make, post and obviously eat this awesome dessert. So it becomes a bonus post. Eidi for my mitra(s) (readers).

Recipe Sheer khurma is a thick sewaiyaan kheer prepared with lots of nuts and dates. I did not have dates. So I couldn’t add those but it’s mentioned in the recipe.
The nuts and dates make Sheer Khurma quite sweet. So little sugar is added. However, if you are omitting dates or cutting down the quantity of nuts, you might have to increase the quantity of sugar.
1. In the images you will see larger quantity than as mentioned in the recipe. This is because I have prepared double quantity of sheer khurma.
2. Soak the dry fruits overnight. In the morning de-skin the cashews, pistachios and almonds and slice them. De-seed the dates and chop them.
3. Boil 1 litre milk.
4. Roast 1 tsp saffron.
5. Add saffron to milk.
6. Add 2 tbsp sugar.
7. Add 2 tbsp condensed milk.
8. Heat 1 tbsp ghee.
9. Add 1 clove.
10. Add the sliced/chopped nuts (except dates) and roast them for a minute.
11. Add 1 cup vermicelli.
12. Roast the vermicelli till it turns golden brown.
13. Discard the clove before adding the vermicelli and nuts to milk.
14. Add the vermicelli, nuts and dates. Let it simmer
15. In a small pan heat 1/2 tbsp sugar till it melts and caramelises.
16. Add the caramelised sugar to sheer khurma.
17. Garnish with 1 tsp elaichi powder.
18. And serve.

COOK TIME 30 minutes
TOTAL TIME 40 minutes
