Dosa is a pancake typically made using rice and lentils (although very distinctive ingredients which are uncommon to south Indian food are also being used to make dosa such as oats dosa, bread dosa, etc). Generally, dosa is crisp and thin. It is stuffed with some mixture, however, this recipe deals with plain dosa.
Dosa asks for
perfect batter: I prepare the common batter for idli and dosas. this way I am able to serve idli dosa both to my family. of course, dosa batter has a thinner consistency than that of idli and the same should be adjusted. I never felt the need to make a separate batter for dosa as I always get perfect dosa using this batter.
1. Consistency of dosa batter : Take dosa batter. add water as much required to get a pourable and spreadable consistency.
2. Season pan : Heat a dosa skillet for best results. sprinkle few drops of water. it should immediately evaporate. wipe off the tawa. grease with butter and wipe off. the pan/skillet is ready to make dosa.
3. Spread dosa batter : Take a bowl full of dosa batter. pour it. spread on a hot skillet in a circular motion as thin as possible. keep the flame low.
4. Let the dosa cook : Drizzle little melted butter on the edges of dosa. it will start leaving the sides. within 2 minutes the bottom of dosa will turn golden brown. fold it in the desired shape.
5. Bon appetit : Serve dosa with coconut chutney
